When you buy a ticket to Taste the Flavours 24 you can get into any of our kitchen demonstrations for free. Starting at 11.30am our chefs, passionate producers and expert bakers will be showing you new skills, innovative ideas and classic combinations starting on every half past the hour.

Damian Caldwell - "a cheeky cheese recipe"

When we asked our resident chef-compere to take a spot he immediately gravitated towards cheese - his personal obsession. He mentioned a "cheeky cheese recipe" and we said yes!

Damian will be showing us his rich and satisfying tartiflette - a continental favourite that he gives his own personal slant to.

The Crown and Thistle occupies an eighteenth century coaching inn on Bridge Street just a few yards from the entrance to the Festival Field.

Chef Diogo and his Salmon "En Croute"

The Crown & Thistle are proud to present a demonstration by award winning Senior Head Chef Diogo Perreira: making an individual portion of Salmon En Croute. Using teachings from his home on the Portuguese island of Madeira, Diogo along with the team at the Crown & Thistle, effortlessly blend classic Mediteranean flavours with British staples to create an explosion of flavour, fusioned together seemlessly. Diogo will take you on a full journey, from suppliers sourcing the freshest ingrediants all the way to the finished product on the plate; while visitng the history of both the dish and it’s place in the Crown & Thistle Hotel.
